Whilst lazily watching Netflix one Sunday afternoon, I instantly had a craving for my chocolate chip & peanut butter cookies. I always find that when I make this recipe, I am never able to patiently wait until to cookies have fully cooled from being in the oven and the cookie is gooey and soft in the middle with the chocolate still slightly melted.
These are enjoyed best with a glass of cold milk

¾ cup unsalted butter
¾ cup golden caster sugar
1 cup white caster sugar
1 cup smooth peanut butter
2 medium eggs
2½ cups self raising flour
1 tsp vanilla extract
¾ cup coarsely chopped 70% cacao dark chocolate
- Mix both butters, sugars and eggs and vanilla with an electric hand whisk until thoroughly combined.
- Fold in the dark chocolate and flour until the cookie dough is consistent.
- Bake for 10 minutes on 180ºc for 12 minutes, lowering to 140ºc for another 10 minutes.
