Once I started making my own onion marmalade, I haven’t looked back. It goes great as as base for tarts, pizzas and alongside a plethora of dishes.

Ingredients
400g red onion, thinly sliced
1 tbsp butter
2 tbsp golden caster sugar
50ml balsamic vinegar
50ml red wine vinegar
1 tsp red chili flakes (optional)
Salt & pepper to taste

Melt the butter in a medium pan and add the onions in a saucepan on medium heat.

Add in your sugar, vinegars, chili, salt & pepper. Lower the heat and cover with a lid. Simmer for 45 minutes, stirring occasionally until sugar is fully dissolved and the mixture starts to thicken.
